Our favorite dessert

I’d not made it in eons, but when I was asked to bring a dessert to a party recently, this one came to mind. The boys were praying on bended knee for leftovers, which, to their great delight, there were. Then last week, when Brave One turned 20, I reprised it ‘specially for his birthday.

It comes from my sister-in-law down south, Gloria, and it’s called Peanut Buster Parfait dessert.

Crust:
1/2 pound Oreos, crushed
1/4 cup melted butter
Press into 9×13 and freeze briefly.

Filling:
1/2 gal. vanilla ice cream
1-1/2 cup peanuts (I use the Spanish peanuts with the skin just like DQ.)
1 8-oz tub Cool Whip
Mix above and spread over crust. Freeze solid.

Fudge Topping:
2 cups powdered sugar
6 oz. chocolate chips
1/2 cup butter
1 can evaporated milk.
Boil for 8 minutes. Cool. Pour over ice cream.

Oh. My. Goodness. It is incredible. As I don’t care for the fudge part, I scrape that off and give it to the hungry piranhas that are eagerly waving their bowls in front of me, chiefest of which is Mr. Schrock.
