Sure, Mary. Here it is:
Schrock Christmas Pudding
3 cups whole (or at least 2%) milk
1 cup sugar
3 eggs, separated
4 T. cornstarch
1/4 tsp. salt
1 T. butter
1 tsp. vanilla
Mix milk, sugar, salt, and cornstarch. Add in vanilla and egg yolks (save whites) and butter. Cook and stir over medium heat until thick. Pour into bowl and cool.
Topping:
3 egg whites
1 oz. unsweetened chocolate, melted
5 T. sugar
Beat egg whites until foamy. Before they get too thick, slowly add in sugar and then melted chocolate. Beat until thick and spread over cold pudding.
Of note, a single batch isn’t very big, but don’t make more than a double batch at one time as it doesn’t turn out very well.
